QUICK, EASY AND HEALTHY MEALS AND SNACKS

Egg and Avocado on toast.
I use a low carb, high protein bread. Add an avocado and egg with some tomato on the side. Quick, easy and tasty.

Juices.
This is my favourite juice. Kale, Carrot, Orange and Grape juice. I use a mastication juicer as this gives more juice and less pulp.

Meatballs and Courgetti.
I use low fat meatballs or the Waitrose Flexi meatballs. Then add passata, herbs and garlic. Low carb if you want that and super tasty.

Mackerel and Salad
This is a regular in our house. Really tasty and super quick. I like to heat the potatoes up but you can serve cold too.

Omelette and chips.
A great staple for when stocks are a bit low. Chips get a bad rap but if you stick to oven chips and don't have too many then you can still enjoy them. Add a big salad and you have a great meal.

Chicken and chips with a twist.
I love chicken and chips and I added a honey glaze and a pile of salad. Delicious.

Dates with peanut butter.
Dates are high in sugar but still better than a bar of chocolate. It is a really tasty snack too.

Sardines and rice.
This is great if you are in a hurry or only have access to a microwave. I use tinned sardines and flavoured rice and add a big salad. Healthy and super easy and fast.

Salmon and cauliflower rice.
I love cauliflower rice. I just place in a pan and steam it, i like to brown mine but you don't have to. It has so much flavour. I serve with salmon and vegetables and its really tasty.

Sausage, rice and salad.
I use the Waitrose flexi sausages as they are lower fat, less meat and more pulses so a much healthier option. I add rice and salad and it is a favourite.

Graze Bars.
I have a very sweet tooth so am always on the look out for a reasonably healthy alternative. These are one of my favourites. They fill a gap and are very tasty.

Nakd Bars
The main thing I like about these is they are just fruit and nuts. So they are a little higher in sugars than I might like but it is natural sugars. They aren't full of junk and are really nice.

Beef noodle soup.
This is super easy, healthy and because you slow cook the beef you can use a really cheap cut if you want and keep costs low. I made 4 portions with the recipe (can be found on Waitrose) so it was ideal for meal prep. I don't pre cook the noodles or kale as they can go a bit soggy but they take a few mins to do when I need it. It was also very tasty and reminded me very much of the Vietnamese dish beef Pho.
